This savory recipe has everything you could ask for when it comes to comfort food, with its soft, buttery grits, crispy bacon studded sauce, and delectable seasoned shrimp.
Ingredients
- 4 Green Onions, Chopped (Optional)
- 2 Cups of Reduced-Sodium Chicken Broth
- 1 Teaspoon of Cajun or Blackened Seasoning
- 2 Cups of 2 percent Milk
- 3 Garlic Cloves, Minced
- 1/3 Cup of Butter, Cubed
- 1 Pound of Uncooked Shrimp (31-40 per pound)
- 3/4 Teaspoon of Salt
- 8 Thick-Sliced Bacon Strips, Chopped
- 1/2 Teaspoon of Pepper
- 1 Cup of Shredded Cheddar Cheese
- 3/4 Cup of Uncooked Old-Fashioned Grits
Directions
Step 1: Add 2 cups of 2 percent milk, 2 cups of reduced-sodium chicken broth, 1/3 cup of cubed butter, 1/2 teaspoon of pepper, and 3/4 teaspoon of salt to a large saucepan and bring to a boil.
Step 2: Slowly stir in 3/4 cup of uncooked old-fashioned grits.
Step 3: Reduce heat, and then cover with a lid and cook for 15 to 20 minutes, stir occasionally.
Step 4: Stir in 1 cup of shredded cheddar cheese until smooth, then set aside.
Step 5: Cook eight chopped thick-sliced bacon strips until crispy in a large skillet. Then drain on paper towel, but keep the four teaspoons of drippings in the skillet.
Step 6: Take the 1 pound of uncooked shrimp and sauté in the skillet with three minced garlic cloves and 1 teaspoon of Cajun or blackened seasoning. NOTE: You want the shrimp to be pink.
Step 7: Mix the bacon bits in with the shrimp. Then serve on top of grits. Sprinkle with the optional green onions.
